Homemade Sourdough Bread
Makes 2 loaves
4 cups sourdough starter
8 cups plain flour
1 tablespoon olive oil
2 tablespoons sugar
1 tablespoon salt
1 tablespoon baking soda
5 tablespoons water
1. Mix the sourdough starter, sugar and oil together in a large mixing bowl. In a small glass (shot-glass size) mix together the baking soda and water until combined. Add the four the glass of baking soda to the mixture and combine until it forms a dough.
2. Turn the dough out onto a floured surface and knead for 8 to 10 minutes. Form the dough into two balls and place each ball in an greased bowl, turn once to coat the dough. Allow to rise for 3 hours, or until doubled in volume.
3. Pre-heat oven to 400 degrees F. Punch down the dough and let rest for 15 minutes. Shape into loaves and place on a greased baking pan or on top of parchment paper (more artisan look).
4. Bake at 400 degrees F for 30 minutes and then reduce the heat to 350 degrees F and baking for another 30 minutes, or until done.
